Hand-selected, low-yielding clusters of native grapes—specifically Corvina, Corvinone, and Rondinella—are picked from the historic, hillside Classico zone.
The pristine grapes are arranged on shallow racks inside specialized drying rooms (fruttaio) for three to four full months through the chilly winter. As the water slowly evaporates, the grapes lose up to 40% of their volume, drastically concentrating their natural sugars, acids, and skin tannins. Following a slow, cold maceration and winter fermentation, the liquid is transferred into large oak barrels to age for a minimum of two to three years, shaping a velvety architecture that perfectly carries a dense 15% to 16% ABV.
